1. Tojoro 180 shirogami Gyoto. Great great great knife to sharpen on. Just a pleasure. Great Knife for the beginner sharpener.
2. Forgecraft Slicer. Just another great knife to practice sharpening and thinning on. 1095 carbon knife from the 60.
