What did you cook today

Post by Warnerupdag » Sun Jan 13, 2019 4:45 pm

not sure -- i dont do frozen chicken in it. I think if you are using the poultry setting with frozen chicken you would need more time for it to cook. Pasta shouldnt be too bad if you drain it -- i make a pasta and sauce in it and it works just fine. What recipe book are you using?

Here are some duck breasts that I scored with a Keijiro Doi White Steel #2 240mm Kiritsuke. I rarely use this knife and it was a treat to use and performed as expected. I am brining the duck in salt, honey, juniper berries, and thyme. After the brine, they will be air dried and browned on the stove and finished in the oven. I love duck, but my wife is not as enthusiastic, so I always enjoy it as a special meal.

Awesome looking food, y'all ! I still have a ton of frozen home-made gnocchi in the freezer, so dinner was leftover potroast, gnocchi simmered in the braising liquid, and piave cheese.

Fantastic! I tried making gnocchi a year ago and it failed miserably. Came all apart when I put it in the boiling water. I'm thinking my potatoes were too lumpy, as I didn't have access to a ricer. Any tips or a foolproof recipe?

Some fantastic product on display this morning folks. After all the discussion last week about using dutch ovens for things other than stews I broke mine out last night for chicken tacos. Sweated the onions appropriately (low heat, low oil) and then seared the small cubes of chicken. Came out great, but what really made me want to try it was the lack of splatter and boy did it deliver. The only mess was made when trying to move the left overs to tupperware.

My grandson was over today being sick from school. We made two quiches with egg, milk, cream, leek, prosciutto, bacon and smoked gryuere. Crustless and quite delicious.

I love this thread - pics are great - food is very visual. I wish I could post pics, but conditions of my employment dictate mean I can't. But even without, just knowing others are teaching younger generations to cook is great.

Datster - I've now got to try to emulate your dish on Saturday morning - Jen wants to try it so I'll be on it early Saturday morning. I love to cook for her breakfasts on the weekend - most days I'm out of the house before she gets up. Bringing her breakfast in bed on the weekend is one of my finer moments. She commented on how good your stuff looked, and I'll do my best.

For what it's worth, I don't have a food mill at home either. I am old school and use forks. A lot of folks boil their potatoes, which adds extra moisture and is not a good thing. I bake the potatoes at 400* or so (make sure to poke them with a fork), that way they steam in their jackets and shed a lot of moisture at the same time.

Generally if your gnocchi is falling apart you are not using enough flour. Make another batch! It's a great thing to make in a large amount and freeze!

Cold and dreary here today also...did a Middle Eastern inspired shrimp and Portuguese sausage dish with chick peas, butternut squash, peppers/tomato/onion//garlic, etc. It had a requisite amount of smoked paprika and cumin...matched well with the smoky Highland Park Magnus scotch, recent purchase and decent value/quality. Also tried the Mondavi, bourbon barrel aged cab...hard to complain for the price, might be good with a burger, but probably not going to be a repeat, but glad to have tried.

Almost forgot....the real reason we are all here...used my trusty Kono Damascus 210mm to cut 1 green pepper, 1 onion, and halve a bunch of grape tomatoes.
