I'm a lefty and I ordered one anyway. If the D isn't comfortable -- and it's not likely to be -- I'll call some sort of audible.

Re: What did you cook today?

Started out the day with a dish that, apparently, I'm going to keep making until either I run out of leftover sausage or my family gets sick of it . . . https://www.ronniesuburban.com/photos/food/homecooking/omelets/sausageonionscheesescramble.21.0725.01.plated.jpg Leftover Sausage Scramble with Che...

Re: What did you cook today?

Tasty looking meal, Ronnie. I've not cooked with dry vermouth before. What other dishes do you enjoy with it? That Takeda looks badass too. Pasta puttanesca with kale tonight. I tried to add some layers tonight, for example tomatoes in a few ways (paste, fried until caramelised, and fresh), couple ...

Re: What did you cook today?

Here's one from last weekend that I forgot to post. Had a few extra chanterelles from my forager, and a chef friend told me that chanterelles, plus shallots and dry vermouth was one of his favorites, so I decided to give it a whirl . . . https://www.ronniesuburban.com/photos/food/homecooking/mushroo...

Re: What did you cook today?

Sadly, I haven't been cooking much this week. Work was exceptionally busy and we had catered lunches there every day that provided ample leftovers for dinners. But I decided to make another big old scramble for the family this morning . . . https://www.ronniesuburban.com/photos/food/homecooking/omel...

I love the concept. If the slots are still just open spaces would that make it possible for some of the blades to come into contact with each other?

Yep, I've said it before, Ronnie is taking pictures from foodie mags and claiming as his own creations.... :? :P :ugeek: LOL! I am still very much my new camera's bitch but I'm beginning to turn the tide. It's been more than 10 years since I bought a new camera and while the basic principles of pho...

Re: What did you cook today?

Beautiful! Love the meal, and your custom handle. The Raijin was my first gyuto and remains one of my favourites. Whenever I went in a direction (I.e. more laser, out more workhorse), I just kept on coming back to it. What's your impression of the knife so far? I haven't seen too many folks taking ...

That's awesome that your friend brought you those freshly foraged mushrooms. They look delicious. Well, I buy them from her but she does contact me regularly and brings them to my door, which is very nice. Tonight was unagi don with some cabbage and Kewpie, just because . . . Who needs a reason?! Re: Any tips on kitchen blowtorches?

With the Searzall, be sure to use the squat Coleman-type camp stove propane cylinders, not the tall thin kind they sell with the torch. The tall ones are very unstable with the Searzall attached and they tip over easily. Not good after you’ve seared something and the Searzall is glowing red hot. Th...

Re: What did you cook today?

Took another swing at Sichuan-style cold chicken, a dish we're thrilled to be able to recreate at home. And the guidance I aggregated via a few youtube channels has set us up nicely for doing so. This version holds its own with all but the very best local restaurant versions . . . First up, the poac...

Thanks. The Rader is relatively new. I bought it about a year and a half ago. I really need to use it more often.

Re: Any tips on kitchen blowtorches?

Unless space is really an issue, I'd get a standard-sized blow torch. It won't be overkill and you'll have it for other tasks, whereas using a kitchen-designed blowtorch for other tasks often leaves you underpowered. I own and really like my Bluefire cylinders (and their self-igniting nozzle head) ...

Re: I repaired my friend's tipped Shun

" Maybe I should go back at it before I return it to him." Perhaps. 'The enemy of good is perfect' - He may be happy with it just the way it is. The main thing in this type of repair is to keep as much of the original profile as possible. You've done an excellent job of that. And, the new...

Nice work Ronnie & disaster averted for your friend He seemed so sad about it and has so many stories wrapped up in his gear. I'm glad I could prolong the life of this piece. You are a good person Mr. Suburban. It looks good. I hope your friend appreciates your hard work. I'm sure he will. Good...
