He gave me the name of the knife maker for the Gyuto, and I looked him up ... turns out CKTG sells knives from the same maker... which I REALLY enjoyed telling him.

Stuff like that cracks me up. By which I mean: how ignorant and narrow-minded.
I grew up with a Jewish grandmother from Eastern Europe, but probably the best matzoh ball soup I have ever had (at least as good as my grandmother's) was made by a Black co-worker from Louisiana who just knows how to cook and learn about and respect all kinds of food. My grandmother would be in heaven eating it, if she wasn't there already.
It's a big, mixed-up world in all the best ways. Boundaries are falling and traditions are increasingly shared, respected and cherished across all kinds of lines and spaces. Sad that some people are so slow to catch on.

True story: I'm sitting here having lunch, break from zoom teaching, jealously looking at your collection Bob (the Toy AND the Wat!, drool) and my wife asks what I'm looking at, so I show her the picture.

Thanks Gladius. The only reason that Kurosaki hasn't been on my wishlist is I don't think I remember seeing it available. Is it?
Anyway I just searched it up and I can find it (albeit sold out) but I'm wondering if it's periodically here at cktg. Hadn't been on my radar and it's exactly the kind of thing I'm looking for, considering, along with the matsubara and some other things.

Seems there are a few variations of this knife with different vendors having different finishes which appears to be common for Yu. Im waiting for a hammered finish but that one above would work also. You will have to sign up for notification when they come back in stock...Gladius always finds the hard to find stuff!
Well, the martin yan is old stuff not worth selling and was a gift, but i tried selling the misono and nobody wants it so not worth selling to lose that much. the Daovua was a whim purchase, they just look cool. The Kohetsu sld is my beater nakiri but works so well and its stainless so a great wife tool if you get my drift. The Wat and Toyama well sometimes i contemplate selling one or the other but such a nice pair they will stay. And finally EVERYONE needs to have a CCK.

It is available on various sites but it sells out quickly. Put your name in to get emailed when available.

My Martin Yan is the oldest knife on my block! It was my sole knife for decades, and I would never get rid of it.

For the cleaver nakiri portion of my knives it might end, but I have to agree, if Konosuke happened to come out with an HD nakiri or any kind of nakiri or lightweight cleaver/tall nakiri or Kiri I would have to revisit this topic. Konosuke does still make HD2 Nakiri actually. They are quite nice.
