This was my first time working with Joe. He was very responsive and answered all my questions, and his craftsmanship is sensational.

Handle made from Royal Ebony and Hawaiin Koa with nickle silver spacer.
Every time I see a Sukenari I say "Oooo!" One day I will have one. That's a very nice looking knife you have there. :)

    Saw a nice santoku on deep discount at a local shop and bought it for a friend who was ready for a second knife a couple years after falling in love with a Kohetsu Blue #2 gyuto I recommended from Mark. This is the top image of the Akifusa 165mm in SRS15. It led to a very rare impulse purchase of my own below (Morihei by TF 165mm Nakiri in blue super—) my first nakiri! It was one of those rare moments when you actually pick up a knife you had no previous interest in and feel a bit of instant magic. I hope it lives up to my expectations!

    I'll admit that it was all a bit hard to swallow, given that the only reason I entered the shop was to buy some sale-priced Konosuke ebony handles to give some familiar friends new boots...!

    Comments: I'm short, a home cook, prefer lighter, thinner blades, and have tried dozens of brands over the years.

      I have 2 knives by Shiro Kamo and they are both exceptional performers.
      210 AS Kiritsuke with an vary thin tip, a favorite for tomatoes, onions and slicing steak.
      210 W2 Damascus Gyuto, this thing is just thin everywhere.

        I would be inclined to believe that it would be very dangerous being in a place where one could actually handle knives. Hope you are both pleased.

        Nice set, daviddg! I really like rustic knives, those are some good looking examples. I'd be curious how heavy some of those are if you happen to be inclined to weigh them.

        Thank you. Past 9-12 months have been on a buying spree. Now I have more knives than I know what to do with.
        I have all spec's in a spread sheet, so no problem on anything you would like to know or see.

        Matsubara ginsan kiri cleaver
        Could be my last knife? Just myself to cook for now so might be the last one. But its a beauty and I waited about 2 yrs for these to come back in stock. Fit and finish are excellent and it cuts like a dream. This one is ginsan. https://www.chefknivestogo.com/mag3nakicl19.html

        Perhaps you would like to show it? I requested a workhorse with a tip a bit higher than his normal, and the arc coming off of the board a bit sooner. Haven't had a chance to use it yet, but looks and feels great.

        Looks nice Bob. I like seeing the tip while cutting which this appears to enable. May I ask where the balance point is? Glad you were able finally acquire this.

        What is the handle substrate and how much does this knife costs?
