good training knife?

Post by skypickle »

I need to practice my sharpening skills so I need a knife that will take an edge relatively quickly.
Anything White #1? or is there something better?

Take a look at the Tojiro and Okeya knives. They both have some good knives to learn to sharpen on for reasonable prices.

White 2 is a good steel to practice on.

Getting something with a thin edge is important.

I would also suggest something cheap so you don’t have to worry about messing it up.

Flat profiles are also easier to learn on.

This would be a good one: https://www.chefknivestogo.com/yawh1sa16.html

I'll go ahead and add the daovua knives to the list. They also offer one of the best back stories for a knife. They aren't flat but at 50 bucks you can't really do too much damage to your wallet trying to make it flat. I've really enjoyed the time I've spent with my nakiri and learned a lot about getting really coarse grind marks out of the blade road by messing around with mine. There's also a two piece set that's got some blemishes from them in the closeouts if you want two knives to learn on.

I think the one you ordered looks like a great choice. It can be very frustrating trying to learn to sharpen on a thick knife made of poor stainless steel like I did. Have fun!
